Undo functionality is provided across Watches. If you make a mistake (say, a false start or hitting the wrong lap button), just shake your device and accept the undo prompt. In the case of hitting the wrong lap button, you would then hit the correct button. When you have a moment, you can then go in and edit that watch to take a couple seconds off if the lap time to more closely estimate the correct time.
